You definitely shouldn’t have to adjust that more than once a month, even if you ride daily. If it’s not unlatching, it could be that the whole assembly needs a little grease to help the latch spring push the latch out of the way. I’d try spraying some lithium grease in there to help the claw-part of the latch mechanism slide forward and back on that bolt.
